Welsh Rarebit!! My Mom’s Recipe for Cheesy Goodness!

My mom used to make this recipe for us as a simple dinner when I was growing up.  She often served it with a bowl of soup or a salad.  My mom has become a frequent contributing editor through me to this blog and it seems only fitting.  Enjoy this cheesy goodness!

Mom’s Welsh Rarebit

8 slices good bread

3 Tbsps unsalted butter room temperature

1 Tbsp flour

1/2 cup of porter or ale beer

1/4 whole milk

1 tsp dry mustard

1/8 tsp black pepper

1 1/2 cups shredded sharp old cheddar

1 egg yolk

Toast the bread and spread 2 Tbsps of butter (total) over the slices.  Place remaining 1 Tbsp of butter in a heavy sauce pan over medium heat.  Add flour and stir with a whisk until flour and butter form a smooth paste. Cook for 1 minute whisking constantly. Add beer and milk and stir to form a smooth sauce.  Cook for 2 minutes.  Add cheese, mustard and pepper.  Cook for 3 minutes more until bubbling and hot.  Remove from heat and whisk in egg yolk.  The residual heat will cook the egg yolk.  Pour cheese sauce over hot toasted bread and serve.  I hope you enjoy this delicious simple meat free dinner.  Cheers, Michele
