Tandoori Cauliflower!! So Yummy and Simple!

I made this cauliflower dish the other night and it was a big hit.  So simple too.  It is perfect with any meat dish and a side of steamed rice.

Tandoori Cauliflower

1 head of cauliflower cut into bite sized pieces

1 Tbsp Tandoori grill spice mix

1/2 cup yogurt

2 Tbsp lemon or lime juice

2 Tbsp fresh cilantro chopped

1/4 cup mayonnaise

1 Tbsp olive oil

Preheat oven to 375 degrees F.  Oil a baking dish with the olive oil.  Mix all other ingredients in a bowl until cauliflower is well coated with the spice mix.  Bake for 30 minutes until lightly browned and cauliflower is tender.  Enjoy.  Cheers, Michele
