These pancakes were sent to me by my daughter Madeline who is a fantastic cook and a guest contributor on my blog. These are her no-fail fluffy pancakes which she made for us many times when still living at home. We taught our daughters early in life how to cook and they have done us proud. Madeline is a Cordon Bleu chef if I haven’t already proudly said it enough so I hope you try out her recipe. Enjoy
Madeline’s Delicious Pancakes
1 1/2 cups flour
1 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
pinch of cinnamon
1 1/2 cups milk
2 Tbsp melted butter or canola oil
1 tsp vanilla or caramel extract
1 egg beaten
Preheat non-stick pan over medium heat. Whisk together dry ingredients to ensure no lumps.
In a separate bowl whisk together wet ingredients and pour over dry ingredients.
Mix well until all incorporated. Cook the pancakes until the raw top half bubbles then flip.
Keep the cooked pancakes warm in a 300 degree F oven until all the pancakes are baked. Serve with real maple syrup and butter or yogurt and fruit. Delicious. Cheers, Michele
