The weather remains cold, even colder than yesterday at -28 degrees C. So comfort food reigns supreme. We are going to have Honey Garlic Chicken Thighs cooked in the oven. These could be just as easily done in the crockpot on low, or on the barbecue but my chicken thighs aren’t thawed yet, so into the oven they will go when they are. Hope you enjoy this super easy recipe.
Honey Garlic Chicken Thighs
8 chicken thighs; boneless, skinless
4 garlic cloves minced fine
1 thumb sized piece of ginger minced fine
1/4 cup honey
4 Tbsps low sodium soy sauce
2 Tbsps sesame seeds
1/2 tsp pepper
salt to taste
Preheat oven to 425 degrees F. Mix sauce ingredients together in a ziplock bag and add chicken, mixing to coat all the pieces.
You can marinate the chicken overnight if you wish. Lightly oil a baking dish and place chicken pieces and sauce in dish. Bake for 35 minutes, turning chicken pieces after 20 minutes of cooking time has elapsed. Internal temperature of the chicken should be 165 degrees F. I will be serving this with steamed rice and steamed green beans or asparagus. Enjoy. Cheers, Michele
